Spicy Vodka Fusilli

Ingredients

*Keep in mind, each ingredient depends on preference. We always eyeball and taste as we go*

  • Large Fusilli

  • Shallots

  • Garlic cloves

  • Tomato Paste

  • Vodka

  • Heavy Cream

  • Sugar

  • Pasta Water

  • 1 cup of grated Parmigiano Reggiano

  • Red pepper flakes

  • Salt and pepper to taste

Directions

  • Heat the pan to medium and put in shallots. Cook until softened. Add minced garlic. Let the aromas release and make sure the garlic doesnโ€™t brown.

  • Add a couple spoonfuls of tomato paste and cook until it reaches a dark red.

  • Add around 1/4 cup of vodka and cook off alcohol.

  • Gradually add heavy cream on low heat and make sure everything is incorporated. Heavy cream depends on how creamy you want it. All preference.

  • Add salt, pepper, red pepper flakes and parmesan to taste, we usually do around 1 cup.

  • Add sugar until the harsh tomato flavor is gone.

  • Lastly, add in pasta water to balance out flavor.

  • Now you have creamy, spicy vodka pasta! You can also use different pasta shapes, like penne, rigatoni, and small fusilli. The large fusilli is really just fun to eat. Enjoy!๐Ÿ๐Ÿ‡ฎ๐Ÿ‡น
